I would like to know how often I calibrate the Z-axis belts for the Sovol SV08 Max. Is there a guide to performing the calibration effectively?

Calibration is generally not required frequently. You only need to calibrate when you notice layer lines in the printed model or abnormalities in the Z-axis.
Make sure to measure a 150 mm length here to tension the belt, and you can judge the proper adjustment based on the frequency.

Do I need to remove the vertical structures just to tension the belt or can this procedure be run while the printer is assembled? Sorry for newb question just want to be sure. I love my MAX but I do have issues with the layer lines being uneven and poor looking.

You should adjust the belts after the gantry is assembled, not before.
