Looking at lots of DIY solutions for drying out filament, when it occurred to me that I could just put some desiccant inside an enclosure. This seems like such a simple solution I’m surprised I’m not seeing lots of other people doing it is there a reason why I shouldn’t?

I’m not sure, if your enclosure is not waterproof it will be of any use.
Humidity will continue to penetrate the enclosure and saturate your dessicant.

Stefan, cnc kitchen on you tube, did some tests and concluded that desiccant is almost as good as a food dehydrator for drying filament, it does take a bit longer but removes almost as much moisture from the filament. A popular box is the Ikea Samla, a 22l box will hold 4 1kg rolls of filament. Some draught excluder around the lid seal will help to keep it airtight. There are plenty of printable lid clips available for the Samla range. This is all I use to store my opened rolls of filament and I have no problems with wet filament.
